I think every baker needs to have a set of classic recipes in their arsenal. You, those recipes for basic things that always turn out perfect and delicious. You might not make them all the time, you bake other stuff, but they are always there, right in your pocket, like a reassuring little lucky charm when you need it.

Another way to think of it: if you had a bakery, what would be your everyday staples? Things you make every single day because they are just classic.

Momofuku Apple Pie Babycakes

Happy Holidays! We hope you had a wonderful Thanksgiving, filled with food and family and football (or if you're anything like me, fires in the fireplace and a book in your lap, with football on in the background). And now that that's over... forget Black Friday, let's focus here on what's really important about today: It's the first official day of the Christmas season! Let's hear those sleigh bells jinglin', ring ting tinglin' too...

I think we can all agree Christmas season starts December 1st. Not before Thanksgiving, but as soon as Thanksgiving happens, haul out the holly and deck the halls because it is officially Christmas season. And it doesn't start mid-December like some people chose to believe.

We're big fans of Christmas around here. And we hope you are, too. Because we are ready to get in the spirit, culinary style. Starting with these apple pie babycakes*. Apple pie may seem like more of a Thanksgiving treat, but I think you can get away with it throughout the holiday season. Put it this way: serve a warm apple pie a la mode on Christmas Day, and I don't think you're going to hear much protest. Serve these apple pie babycakes and I bet you'll even get a few "oohs" and "ahhs." 

These babycakes are special. Holidays are special. Even I can do that math.

Momofuku Cakes

I first heard about the almost mythic (among the blogging community, anyway) Momofuku Milk Bar and their eponymous cookbook at the beginning of this past summer. As I recall, I immediately ordered it on Amazon and was drooling over their creative, elaborate recipes just two days later. Although the cakes, with their distinctive exposed exteriors, caught my eye immediately, I didn't have a reason to make them until the very end of summer, when we were hosting a family gathering in celebration of our several summer birthdays. Not only did I have an excuse to make one Momofuku cake, I had an excuse to make two!
