Healthier Coconut M&M Cookies

Every year, my school does this thing called "J-Term" (short for January Term) where for the month of January we just take one class. It's pretty cool... If you get a good class. This year, mine was Weight Training and Nutrition. Overall, it wasn't too bad. There wasn't a lot of work, but in some ways that was bad because there was zero structure to the class. But we did learn a little bit about nutrition, so I started looking up different healthy recipes to make. I found a lot of healthy real food, but real food gets kind of boring after a while, you know? 

Eventually I stumbled across these cookies on Imma Eat That and thought they were perfect. And because we had some lovely coconut M&M's sitting around in the pantry just waiting to be used, I made these pretty quickly one day on impulse. Impulse bakes (is that the right word? bakings? baking sessions?) are normally the best bakes, in my experience. And these didn't prove me wrong.

Cinnamon Roll Cookies

At my high school, you have to take one gym class to get gym credit (because it is also a health class) and the rest of the three credits can be sports. So, I decided to knock out my class in the first semester. And last week we were studying nutrition and had to keep track of all the food we ate for a week (I have not gotten the results on this little project yet, but my teacher glanced at it and said it looked healthy. But the dessert section was conveniently covered up). Anywho, I made these last week so just about every day it says "cinnamon roll cookie." And I'm sure my teacher has no idea what exactly that means. But come on. Cinnamon roll cookie. I'm sure he'll be happy about it.

(That's my hand by the way. It looks great, huh? I should go into a career of hand-modeling. Not blogging. Hand modeling is where it's at.) 
(I might just bribe him with one to get my grade up.)

New York Times Chocolate Chip Cookie Cool Whip Sandwiches

Have you ever baked the chocolate chip cookies off the bag of chocolate chips? The go-to, ever faithful and delicious classic? Or maybe you have your own classic chocolate chip cookie recipe that you always use? Maybe something sentimental from your childhood of coming home to your mother’s freshly baked cookies?

Well, forget about all of those recipes because they pale in comparison to these. I don’t even need to try them. I just know. That is how good these are. The New York Times even says so. And maybe you don’t agree with their politics or whatever (why pay attention to that when they talk about cookies?), but I know you will agree with their taste in cookies. I know I do. And I am totally unbiased.  I can’t even vote. But if I could vote for cookies I would vote for these. (Too much? Too cheesy? But it's true.)

Rolo Cookies

You know what rolo rhymes with? YOLO. (For any of you out there who do not know what this term is, it means "You Only Live Once." It is said a lot in pop culture, supposed to be used when one is taking risks or doing fun stuff, or as a life motto, but only about 2% of the population actually take it seriously, the other 98% use it as a joke. I belong to the 98%.)

But you might feel the need to (jokingly) use this phrase when eating these cookies. When you want to have more than one (which you probably, most definitely will) just think to yourself "YOLO" and have another.

Carrot Cake White Chocolate Chip Cookies

I'm back again - and I brought more cake mix cookies!

You might have noticed a carrot cake theme emerging on this blog. Yeah... That's my fault. In the last couple months, I've developed a weird obsession with it. And as it turns out? Coming to England is the worst best thing someone suffering from acute carrot cake craving could have done. They are gaga for it here! I had no idea that carrot cake was such a British staple, but it's been on the counter of literally every bakery and cafe I've gone into. Large, luscious slices of cake brimming with carrot shreds, raisons, and nuts, and smeared with thick cream cheese frosting... I think I am truly living in some kind of heaven.

But somehow, rather than satisfy my craving, the surplus of carrot cake around me has only served to increase my carroty (← a real word! who knew?) craziness. The success of my Cadbury Caramel Cake Mix Cookies opened my eyes to a world of cake mix cookie flavor possibilities. And the first flavor they landed on? Carrot cake. naturally.

Cookie? Brownie? Brookie? Crownie?

So I was browsing FoodGawker, as I often do, looking for recipes that involve brownie mix, and I stumbled across this beautiful invention: cookie dough with brownie batter mixed in to make some sort of hybrid brownie cookie. Yes, cookie dough. With brownies batter. A combination of two of the most classic and delicious baked goods ever. And yes, if you are having a David After the Dentist "Is this real life?" moment, they are real life. And I made them. And they were delicious.

Butterfinger Cookies

According to my brother, the perfect cookie is a simple and uncomplicated chocolate chip cookie. He gets impatient with Audrey's and my inclination to play around with multiple flavors and complex baking procedures (browning butter, chilling dough, stuffing centers) and if he had his way, all we would ever bake would be Toll House Chocolate Chip Cookies.
